When I grow up, I want to be a DOCTOR! (8.20.12)

After a week of exploring, moving, making new friends, and watching God's faithfulness as we moved to a new country, it was finally Ashkon's FIRST DAY OF MEDICAL SCHOOL!!! So, I thought it would make sense to start as all first days of school should start- with first day of school pictures!! :)




Now, as the day began, I made Ashkon crepes- his favorite breakfast and favorite thing I make :D He was so happy and said it was the perfect way to start medical school!



Today would be more a syllabus day but he was still excited to start! And since he was going to be in class all day, I thought it would be fitting that I go to the pool haha :) We can go to the pool that is located at the University Club in Lanse Aux Epines. This is really a hotel and restaurant that people who are affiliated with the school can stay but they let us use the pool on Mondays on Thursdays! The pool is right on the beach and if we look straight across the ocean we can see the campus. I mean you can't beat this, right??






I went home to get ready for the White Coat Ceremony. We had heard that it would be a zoo so I wanted to get there extra early so I wouldn't be placed in the overflow room to watch the event on a screen. The only reason that I even had the opportunity to see it with my own eyes was a complete answer to prayer!

When we went to pick up Ashkon's white coat on Friday, we had to pick up our tickets as well. Kind of silly but the students had to have a ticket to get in so we got Ash's first. Then, we went to get my ticket. However, they didn't have one for me. After asking for an explanation, they told us that I would be put on a waiting list and Ashkon would have to come back on Monday (the day of the ceremony) to see if he could get me a ticket. If not, then I would get a ticket for the overflow room. I was really not going to be happy about watching my husband walk across the stage in his white coat on a screen so we knew that something this important to both of us needed to be prayed over. We prayed all weekend and then Monday came. Ashkon went to get my ticket and the only thing they had for me was an overflow ticket. We were both completely bummed but Ash was determined to still find me a ticket. So I left for the pool, hopeful that when I got back there would be a real ticket waiting for me. And that is exactly what happened! What I later found out was Ashkon asked around in one of his group discussion classes and a girl in his group had an extra ticket for some reason!! God has been so faithful since we have been here and this was just one more way that He has blessed us! 

What an answer to our prayers! God is good!!

I got ready and went to the lecture hall where the ceremony would be held. After much waiting, they sat us in the area for families. This was such an exciting and anticipated event! I got to give Ashkon a quick hug and kiss before he had to sit down- he looked so handsome!! :) As soon as I got my seat, I found him right away! The ceremony was really well done! There were a couple speakers, including the chancellor who founded SGU! Each student got to walk on stage and have their white coat put on by a professor, faculty member, or the main speaker of the ceremony! Ashkon started classes today, but this ceremony was truly significant in feeling like his dream was really coming true!

After the ceremony, there was a really nice reception with food and drinks. We were both pretty hungry but I had dinner for us so we just grabbed a few things to try! When we got home a finished making friend rice for the first time! It was really good! I have added to recipe for the crepes and fried rice below! (I will be posting recipes of all the new meals we are trying in case you want to try some too!) Enjoy :)

Crepes 
(serves 4 to 6 --12 crepes) Prep Time: 1 hour

1 cup of all purpose flour
2 tablespoons sugar
¼ teaspoon fine salt
1 cup milk
¼ cup water
3 large eggs
1 teaspoon pure vanilla extract

4 tablespoons unsalted butter

1.     Whisk the flour, sugar, and salt together in a bowl or pulse in a food processor or blender. (I always used a blender and really liked how the batter turned out)
Gradually whisk in the milk, water, eggs, and vanilla extract or process or blend until smooth. Set aside for at least 30 minutes. (The batter can be made to this point a day ahead and refrigerated. Bring to room temperature before adding butterßThis makes a difference!)
2.     Melt the butter in a small saucepan or in the microwave; whisk it into the batter. Pour the batter into a measuring cup with a pouring spout or a small pitcher. Have plates ready for serving. (Instead of putting the butter in the batter I would use a small spoon after microwaving it and put a little in the pan before pouring the batter for each crepe. Be careful if you do this- the butter sometimes pops/splatters when you put it on the hot pan)—I also usually put the batter in a pitcher while it is refrigerating and then use a ¼ cup of batter for each crepe, add depending on how thick you want each crepe
3.    Heat a medium nonstick skillet over medium heat until a drop of water bounces and sizzles in the pan before evaporating. Pour a little less than ¼ cup of crepe batter (adjust as needed) into the skillet and quickly swirl it to coat the pan evenly. Cook until the batter sets, about 1 to 1 ½ minutes. The crepe will blister in the middle and the edges will get a little crispy. Using a spatula, carefully pick the crepe up and flip it to cook the other side, 15 to 20 seconds. Repeat with remaining batter, serving or stacking the crepes as they cook.
4.     To serve, spread about 1 tablespoon of the chocolate-hazelnut spread in the center of the warm crepe. Fold the top of the crepe over to make a half circle then fold the right side over to make a triangle. Repeat with the remaining crepes. Serve 2 or 1 crepe per person, topped with a scoop of ice cream or a dollop of whipped cream.
(Our favorite is just to use cinnamon sugar!<--Put desired amount of cinnamon sugar on the crepe and then roll it up like a fruit roll up--But we’ve also done strawberries and powdered sugar, apples and cinnamon, just syrup, or ice cream J )

Crepe Wisdom: Stack the crepes as they cook to keep them warm. Crepes can be made a day ahead, wrapped in plastic, and refrigerated at leas 1 hour before serving.


FRIED RICE
Ingredients
3 large eggs
Kosher salt and freshly ground black pepper
Vegetable oil, for frying (GRAPESEED OIL OK BUT HEATS UP VERY FAST)
2 boneless, skinless chicken breast halves, CAN USE JUST ONE BIG ONE cut into thin strips
1 teaspoon sesame oil CAN USE CANOLA
1 large onion, finely chopped
2 garlic cloves, finely minced
4 cups cold, cooked rice
6 green onions, thinly sliced, CAN USE REGULAR ONION
½ bag frozen mixed veggies or any left over veggies ABOUT 1-2 CUPS
2 tablespoons soy sauce
Directions
Beat eggs with a whisk in a small bowl and season with salt and pepper, to taste. Heat very little oil (CAN USE PAM) in a medium frying pan over medium heat and make an omelette with the beaten eggs. Turn out onto a plate to cool (do not fold omelette). Chop into bite sized pieces. Set aside.
In a medium bowl, toss chicken strips with the sesame oil and season with salt and pepper, to taste. Heat 3 tablespoons vegetable oil over high heat in large frying pan or wok and stir-fry the prepared chicken strips until lightly golden, about 2 to 3 minutes. Add the onion and garlic and stir-fry for 1 to 2 minutes or until onion has softened. Stir in the cooked rice and onions, AND FROZEN MIXED VEGGIEStossing and mixing thoroughly until very hot. Sprinkle with soy sauce and mix evenly. Remove from heat and stir in chopped cooked egg. If desired, garnish with additional sliced green onions.

HAVE TO MAKE RICE AHEAD OF TIME
1 ½ CUPS OF RICE MAKES ABOUT 4 CUPS
DO TWICE THE AMOUNT OF WATER TO RICE AND COOK AS DIRECTED
